The Hatch Rotisserie & Bar opens in downtown Paso

The Hatch Rotisserie & Bar, a long-time dream of owners Maggie Cameron and Eric Connolly, opened this week in downtown Paso Robles at 835 13th St.

This new neighborhood eatery is designed as a gathering place for friends to enjoy simple foods, classic and craft cocktails and beautiful wines, the owners announced in a press release. The duo has hired chef Mateo Rogers to oversee the kitchen, which includes a wood-fired rotisserie.

“Nothing brings people together like a home-cooked meal, and we want to share with our guests the respect we have for food traditions and for the people who grow and produce the food we eat,” says Cameron. “Opening the restaurant has been a dream come true for both Eric and myself, and we could not be more thrilled to be doing so in this historic old building in the middle of our Paso Robles community.”

Boasting an open kitchen, diners can gaze at chef Rogers as he watches over the restaurant’s wood-burning rotisserie swirling with the likes of chicken, ribeye or lamb. The meat on the spit will change daily, and the Hatch will offer organic rotisserie chicken and sides for take-away.

With a full bar, cocktail hour is a way of life at The Hatch, the owners say. Each classic or craft cocktail and every wine or local beer poured has been as thoughtfully created and sourced as the ingredients on their menu.

Guests looking for a late night bite can now celebrate, as the restaurant will offer late night dining till midnight Thursday through Sunday. It’s a great place for local industry friends, concert-goers and others who prefer dining after hours. Those looking for a new Sunday morning routine can head to The Hatch for their Sunday brunch that includes comfort classics with chef Rogers’s signature spin.

“Our hope is that The Hatch not only provides great food but that our hospitality drives home that we truly welcome everyone into our restaurant,” says Connolly. “We want people to feel as if they are walking into our home and are being treated to wonderful night with friends.”

  • Cocktail hour: Monday – Saturday, 3-6 p.m.
  • Dinner: Monday – Saturday, 5-10 p.m.
  • Late Night: Thursday – Saturday, 10 p.m. to midnight
  • Sunday Brunch: 11 a.m. – 3 p.m.
