Two locals open new bakery in Atascadero
Both savory and sweet baked goods are available
Two Atascadero natives and childhood friends Emilie Gouldstein and Brittany Champagne opened up a new bakery called Bramble Pie Company on May 20 that’s filled with savory and sweet treats at 5945 Entrada Ave., Atascadero.
Gouldstein worked as a baker at Big Sky Café in San Luis Obispo for 12 years and left in 2017, after which she joined Trumpet Vine Catering until 2020 when the Covid-19 pandemic shut down big events like the weddings that the company mostly served.
“I just wanted to make everything by hand and high quality as I can,” said Gouldstein.
Champagne briefly worked alongside Gouldstein at the café from 2014-2016, but left to work at The Steakhouse at the Paso Robles Inn for five years.
The two had a vision of creating their own place in Atascadero that would source local ingredients from farmers in the region to produce the freshest baked goods by hand.
“We have such a good community and there’s so many things to do here,” said Champagne.
They’ve also collaborated with other local businesses like Joebella Coffee Roasters, whose drinks are available at the bakery, and Negranti Creamery, whose ice cream scoops are available to be served with pies at the bakery.
The bakery recently participated in the pub crawl and even extended its hours to offer its goods to participants.
The bakery is spacious with shaded seating options outdoors, as well as several tables indoors where guests can see pies and other baked goods being made in the open kitchen behind the counter.
Pie, quiches, empanadas and cookies are just some of the many baked goods on offer at the location. The owners recommend trying their new brown butter cookie with sea salt.
