Local chef releases new cookbook

Book offers a collection of recipes intertwined with personal stories

– Local Chef Candice Custodio is set to launch her new cookbook, “The Versatile Chef.” Accompanied by photographer Ariette Armella, the book offers a collection of recipes intertwined with personal stories, providing a narrative journey through Custodio’s culinary experiences. There will be a special launch event for the cookbook held at Carbon 6 Wine Bar in Atascadero on March 3 at 10:30 a.m.

The genesis of “The Versatile Chef” originated from Custodio’s desire to capture her distinctive voice and culinary style during her transition from the executive chef position at a local winery to reestablishing her private chef business on the Central Coast. The book served as a creative outlet during the rebuilding process.

While in development for some time, the book gained momentum in 2023, driven by increasing requests for Custodio’s recipes from clients, friends, and readers of the San Luis Obispo Guide newsletter. This prompted the decision to compile and share the diverse collection of recipes defining her culinary journey.

Inspired by Tamar Adler’s “An Everlasting Meal,” “The Versatile Chef” goes beyond a conventional cookbook, offering substitutions, modifications, and storage tips for each recipe. Custodio’s personal favorite, the Pineapple Upside-Down Cake, is among the featured recipes.

“Looking back on the index of the books, there are a lot of stories behind every recipe, but the Pineapple Upside-Down Cake is particularly close to my heart,” Custodio states. “It is the first recipe I ever learned how to make, probably back in middle school. This recipe exposed me to the science and technique behind cooking, which continues to motivate me today.”

“The Versatile Chef” reflects the flexibility and adaptability of Custodio’s recipes, symbolizing an invitation for readers to explore and experiment with their culinary skills.

While the project had long been on Custodio’s mind, challenges arose during production, with time being the most significant obstacle. Balancing her private chef business, family life, and a growing farm proved to be a formidable task, especially with a toddler and another baby on the way.

“I’ve learned how much is involved with doing a book, and especially doing a book correctly! You never think about the time required for photo shoots, writing content, creating layouts, and editing. It’s a big endeavor!” Custodio said. “Collaborating with Armella on the book has been enriching. I am grateful that the universe brought our paths together. I had a vision for the book, but after working with her, I don’t think this book would be as beautiful nor complete without her.”

When asked about the primary goal with “The Versatile Chef,” Custodio responds, “My main goal with this book is to share my words and recipes with others. To know that people will have this book with my words and thoughts in their homes is humbling. It is a beautiful notion that my recipes may be the source of someone else’s inspiration to cook and create their own memories and stories.”

Candice Custodio: Born and raised in Los Angeles, Custodio brings a Latin flair to her culinary creations, influenced by Mexican, Costa Rican, and Puerto Rican food cultures. She is the founder of Chef Candice LLC, a private chef business, and the creator of Club SupSup, the Central Coast’s first and only Latin-inspired Supper Club.
